Ham and Cheese Breakfast Bake

Prep: 20 minutes

Total: 1 hour, 20 minutes, plus soaking

 

2 1/2 cups low-fat (1%) milk

1/4 tsp salt

1/4 tsp pepper

8 large eggs

2 Tbsp Dijon mustard

1 tsp. chopped thyme

1 large baguette, thinly sliced

  1. ounces cheddar cheese, shredded

8 ounces thinly sliced deli ham

  1. Spray square 2 quart baking dish with nonstick spray.

  2. In bowl, whisk milk, eggs, mustard, thyme, salt and pepper to blend.

  3. Arrange half of bread overlapping in baked dish. Pour half of milk mixture over bread; sprinkle with half of cheddar. Top with ham, then repeat layering of bread, milk and cheddar. Cover dish; chill one hour or up to overnight.

  4. Preheat oven to 350°F. Bake 50 to 55 Minutes or until golden and custard is set. Let stand five minutes before serving. Garnish with chives.
     

Serves six. About 525 calories, 36 gm protein, 48 gm carbohydrate, 22 gm total fat (11 gm saturated fat), 2 gm fiber, 315 mg of cholesterol, 1435 mg of sodium.
